Succulent Lamb Spit Recipe

There is nothing more satisfying than eating a tender slice of roast lamb. It slices like butter and melts away in your mouth, leaving behind its glorious flavour as well as a craving for a second bite.

Invite some friends over for a perfect summer evening and show off your culinary skills by serving a succulent lamb spit.

There is something romantic in the simplicity of eagerly watching your food cook over a fire. Call it an ancestral beckoning or your inner caveman, but nothing will get your taste buds revved up more than the smell of lamb roasting over a fire.

When roasting lamb over a spit it’s best to keep the flavouring simple as not to overpower the taste of your lamb cut.

Succulent Lamb Spit Recipe

Since you’re going to be putting it on a spit over the fire, we suggest taking a tip from the cavemen by using what mother nature provides.

Ingredients

(These ingredients are measured to flavour a 3-pound leg of lamb)

  • 1 1/2 tbsp rosemary
  • 1 1/2 tbsp thyme
  • 1 1/2 tsps salt
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 cloves garlic
  • 2 sage leaves

Method

Destem the thyme and rosemary then finely mince the herbs with the garlic and sage. Mix in the salt, pepper, lemon juice and olive oil to create a gritty paste.

Score your lamb piece by carving small crosses all around the leg then rub your herb paste all over the lamb. Rub the paste thoroughly over the lamb making sure you get into all the grooves you’ve calved.

Let the lamb rest for about two hours before roasting, so that the flavours can really soak into all those nooks and crannies. Once your lamb has rested for two hours insert the spit through the length of your lamb, keeping as close to the centre as you can.

It is important to secure your lamb firmly to keep the weight balanced and ensure even cooking time. This meat is best served medium rare so roast over low heat and remove after about one and a half hours. Once you have removed the lamb from the spit, cover it with foil and let it rest for 20 minute before serving.
