Grilled Tofu and Squash with a Complimentary Chimichurri Sauce and Couscous
Sounds yum right? Chimichurri sauce is an Argentinian condiment mixture of parsley, cilantro, vinegar and garlic. This sauce is great over grilled vegetables and tofu. Once you have found a suitable recipe for the Chimichurri sauce, cut the tofu and squash into cubes and grill until ready (3 minutes a side). Season with salt and baste with sauce then serve with a helping of couscous.
Grilled Asparagus Salad
Simple but delicious. Preheat your grill on low heat while combining lemon juice and olive oil on a plate. Now soak your asparagus in the mixture.
It’s time to get grilling. Put your asparagus on the grill for about 5 minutes and brush with lemon and olive oil mixture. Remove from grill and put back in the mixture. In a rather large bowl, combine spinach, parmesan and slivered almonds. Cut your asparagus into bite size pieces and add to your salad bowl. Toss, blend and enjoy!
An all-time favourite! Place your fresh mushrooms (stems removed) and 20 ounces of teriyaki sauce in a large reusable plastic bag. Put the bag in your fridge and allow to marinate for 4 hours or so.
Out your grill on high heat and place mushrooms. Grill them lightly for 15 minutes or until nicely charred. Once you think they are ready to serve, do so and enjoy.
